  • ¾ cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup rainbow sprinkles (plus extra for topping)

Instructions:

  1. Gather all ingredients and equipment. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, combine flour, baking soda, and salt; set aside.
  3. In a large bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add dry mixture to the wet ingredients. Mix until just combined.
  6. Gently fold the rainbow sprinkles into the dough.
  7. Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.
  8. Use a cookie scoop to portion dough onto prepared baking sheets. Sprinkle extra sprinkles on top.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Remove from oven and let cookies cool on baking sheets for 5 minutes, then transfer to a cooling rack to cool completely.
