- 2 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ cup rainbow sprinkles (plus extra for topping)
Instructions:
- Gather all ingredients and equipment. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, combine flour, baking soda, and salt; set aside.
- In a large bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract until well combined.
- Gradually add dry mixture to the wet ingredients. Mix until just combined.
- Gently fold the rainbow sprinkles into the dough.
- Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.
- Use a cookie scoop to portion dough onto prepared baking sheets. Sprinkle extra sprinkles on top.
- Bake for 10-12 minutes or until edges are lightly golden.
- Remove from oven and let cookies cool on baking sheets for 5 minutes, then transfer to a cooling rack to cool completely.
