Ingredients:

  • 225 g unsalted butter, softened
  • 150 g brown sugar, packed
  • 100 g granulated sugar
  • 1 large egg (about 60 g)
  • 1 teaspoon vanilla extract (5 ml)
  • 300 g all-purpose flour
  • 1 teaspoon baking soda (5 g)
  • ½ teaspoon salt (2.5 g)
  • 200 g semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 180°C (350°F). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, use an electric mixer or a whisk to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3–4 minutes.
  3. Beat in the egg and add the vanilla extract, mixing well until fully incorporated.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt until evenly mixed.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed or fold gently with a spatula until just combined; do not overmix!
  6. Use a spatula to fold in the semi-sweet chocolate chips evenly into the cookie dough.
  7. Using a tablespoon or cookie scoop, drop heaping tablespoons of dough onto your prepared baking sheets, leaving enough space between each cookie as they will spread while baking.
  8. Bake in preheated oven for about 12–15 minutes or until edges are golden brown but centers still look slightly soft.
