Ingredients:
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 8 oz cream cheese, softened
- ⅓ cup powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease the loaf pan and set aside.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.
- Mix in the eggs, vanilla extract, and mashed bananas until well blended.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- In another bowl, beat the cream cheese with powdered sugar and vanilla until smooth.
- Pour half of the banana batter into the loaf pan. Dollop half of the cream cheese mixture on top, and swirl with a knife. Repeat with remaining batter and cream cheese.
- Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
