Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 8 oz cream cheese, softened
  • ⅓ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the loaf pan and set aside.
  3. In a bowl, whisk together flour, baking soda, and salt.
  4. In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.
  5. Mix in the eggs, vanilla extract, and mashed bananas until well blended.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. In another bowl, beat the cream cheese with powdered sugar and vanilla until smooth.
  8. Pour half of the banana batter into the loaf pan. Dollop half of the cream cheese mixture on top, and swirl with a knife. Repeat with remaining batter and cream cheese.
  9. Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
