Ingredients:
- 1 lb ground chicken
- ½ lb ground pork (or turkey)
- 1 cup breadcrumbs (preferably seasoned)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- ¼ cup milk
- 2 tsp Dijon mustard
- (Salt and pepper, to taste)
- 4 oz sliced ham (deli or cooked)
- (4 oz Swiss cheese or Gruyere, sliced or shredded)
- (½ cup barbecue sauce, optional for glaze)
Instructions:
- Preheat your oven to 350°F (175°C). Prepare a loaf pan by lightly greasing it with cooking spray or oil.
- In a large bowl, combine the ground chicken, ground pork, breadcrumbs, chopped onion, minced garlic, egg, milk, Dijon mustard, salt and pepper. Mix until well combined but do not overmix to keep the meatloaf tender.
- Lay half of the meat mixture into the bottom of your prepared loaf pan. Flatten it out evenly. Layer on half of the sliced ham followed by half of the cheese. Repeat this process with another layer using the remaining meat mixture on top.
- Top off with any remaining ham and cheese if desired. If youre using barbecue sauce as a glaze, brush it over the top now. Bake in preheated oven for about 55–65 minutes or until cooked through (internal temperature should reach at least 165°F/74°C).
- Once done baking, remove from oven and let it rest for about 10 minutes before slicing. This helps retain juices within.
