Ingredients:

  • 1 lb ground chicken
  • 1 cup breadcrumbs (preferably seasoned)
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 4 oz ham, thinly sliced
  • 4 oz Swiss cheese, thinly sliced
  • Fresh parsley, chopped (for garnish)
  • (For the Marinara Sauce) 2 cups marinara sauce (store-bought or homemade)
  • (For the Marinara Sauce) 1 tsp Italian seasoning
  • (For the Marinara Sauce) Red pepper flakes (optional, to taste)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, eggs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. On a sheet of parchment paper or plastic wrap, flatten half of the meat mixture into a rectangular shape.
  4. Layer with slices of ham followed by slices of Swiss cheese.
  5. Carefully roll the meat over the filling using the parchment paper to help guide you into a log shape.
  6. Place this rolled meatloaf seam side down in a greased baking dish.
  7. Stir in Italian seasoning and red pepper flakes if desired; simmer until heated through.
  8. Once cooked,remove meatloaf from oven and let it rest for about five minutes before slicing.
