Ingredients:
- 1 lb ground chicken
- 1 cup breadcrumbs (preferably seasoned)
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 4 oz ham, thinly sliced
- 4 oz Swiss cheese, thinly sliced
- Fresh parsley, chopped (for garnish)
- (For the Marinara Sauce) 2 cups marinara sauce (store-bought or homemade)
- (For the Marinara Sauce) 1 tsp Italian seasoning
- (For the Marinara Sauce) Red pepper flakes (optional, to taste)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground chicken, breadcrumbs, eggs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- On a sheet of parchment paper or plastic wrap, flatten half of the meat mixture into a rectangular shape.
- Layer with slices of ham followed by slices of Swiss cheese.
- Carefully roll the meat over the filling using the parchment paper to help guide you into a log shape.
- Place this rolled meatloaf seam side down in a greased baking dish.
- Stir in Italian seasoning and red pepper flakes if desired; simmer until heated through.
- Once cooked,remove meatloaf from oven and let it rest for about five minutes before slicing.
