Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk (whole or buttermilk)
  • Optional spices for seasoning: Cinnamon Sugar (1 tablespoon sugar, 1 teaspoon ground cinnamon) or Garlic Herb (2 teaspoons garlic powder, mixed dried herbs to taste)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.
  3. Add the cold cubed butter into the dry mixture. Using a pastry cutter or your fingers, cut in the butter until it resembles coarse crumbs—this should take about two minutes.
  4. Pour in the milk gradually while stirring gently with a fork until just combined; do not overmix—the dough should be slightly sticky but manageable.
  5. Transfer dough onto a lightly floured surface and gently knead it three to four times until it holds together. Pat down to about an inch thick and use a biscuit cutter or sharp knife to cut out rounds or squares.
  6. If youre using the cinnamon-sugar topping, mix sugar and cinnamon in a small bowl; if using garlic herb topping, combine garlic powder with herbs in another small bowl.
  7. Place biscuits on an ungreased baking sheet about an inch apart. Brush tops lightly with extra milk before sprinkling your chosen kufi topping generously over each biscuit.
  8. Bake for approximately 15-20 minutes until they are golden brown on top and baked through.
  9. Remove from oven and let cool slightly before serving warm.
