Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1½ cups milk
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 6 strips of thick-cut bacon

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Bake the bacon strips until partially cooked but still pliable (about 10 minutes).
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, whisk the eggs, then add milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.
  3. After the bacon is slightly cooked, wrap each strip around a portion of waffle batter or fold it into the batter, using about 2-3 bacon strips per waffle.
  4. Preheat the waffle maker as per the manufacturer's instructions. Grease lightly with cooking spray or butter. Pour the batter into the hot waffle iron and cook until golden brown.
  5. Carefully remove the waffles and let them cool slightly before serving.
