Ingredients:
- 2 steaks (ribeye, sirloin, strip, or your favorite cut), about 1-inch thick (approximately 225g - 280g each)
- 2 tablespoons olive oil (30 ml)
- 2 tablespoons barbecue sauce (store-bought or homemade) (30 ml)
- 1 teaspoon garlic powder (5 ml)
- 1 teaspoon onion powder (5 ml)
- Salt and freshly ground black pepper, to taste
- ¼ teaspoon smoked paprika or chili powder for extra smoky flavor (1.25 ml) (Optional)
Instructions:
- Pat the steaks dry with paper towels. This helps create a good sear.
- Rub both sides of the steaks with olive oil. In a small bowl, combine garlic powder, onion powder, salt, pepper, and any optional spices. Sprinkle this mixture evenly over both sides of the steaks, pressing lightly to adhere.
- Heat your grill to medium-high heat. Ensure the grates are clean. Or Heat a cast iron skillet over medium-high heat until it's smoking hot. A hot pan is key for a good sear.
- Place the steaks on the preheated grill (or skillet). Grill or sear for 4-6 minutes per side for medium-rare. Adjust cooking time based on your preferred level of doneness. For medium, cook for 6-8 minutes per side. For well-done, cook for 8-10 minutes per side.
- During the last 1-2 minutes of cooking, brush both sides of the steaks generously with barbecue sauce. Let the sauce caramelize slightly without burning – keep a close eye on it!
- Remove the steaks from the heat and place them on a cutting board. Tent loosely with foil and let them rest for 5 minutes. This allows the juices to redistribute, resulting in a more tender and flavorful steak.
- Slice the steaks against the grain. Serve immediately with extra barbecue sauce if desired.
