Ingredients:

  • 2 steaks (ribeye, sirloin, strip, or your favorite cut), about 1-inch thick (approximately 225g - 280g each)
  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons barbecue sauce (store-bought or homemade) (30 ml)
  • 1 teaspoon garlic powder (5 ml)
  • 1 teaspoon onion powder (5 ml)
  • Salt and freshly ground black pepper, to taste
  • ¼ teaspoon smoked paprika or chili powder for extra smoky flavor (1.25 ml) (Optional)

Instructions:

  1. Pat the steaks dry with paper towels. This helps create a good sear.
  2. Rub both sides of the steaks with olive oil. In a small bowl, combine garlic powder, onion powder, salt, pepper, and any optional spices. Sprinkle this mixture evenly over both sides of the steaks, pressing lightly to adhere.
  3. Heat your grill to medium-high heat. Ensure the grates are clean. Or Heat a cast iron skillet over medium-high heat until it's smoking hot. A hot pan is key for a good sear.
  4. Place the steaks on the preheated grill (or skillet). Grill or sear for 4-6 minutes per side for medium-rare. Adjust cooking time based on your preferred level of doneness. For medium, cook for 6-8 minutes per side. For well-done, cook for 8-10 minutes per side.
  5. During the last 1-2 minutes of cooking, brush both sides of the steaks generously with barbecue sauce. Let the sauce caramelize slightly without burning – keep a close eye on it!
  6. Remove the steaks from the heat and place them on a cutting board. Tent loosely with foil and let them rest for 5 minutes. This allows the juices to redistribute, resulting in a more tender and flavorful steak.
  7. Slice the steaks against the grain. Serve immediately with extra barbecue sauce if desired.
