- 2 ripe avocados
- 8 oz (225g) button or cremini mushrooms, sliced
- 2 cloves garlic, minced
- 4 slices crusty bread (sourdough or whole grain recommended)
- 2 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper, to taste
- Fresh herbs (optional, for garnish - parsley, chives, or thyme work well)
- Red pepper flakes (optional)
Instructions:
- Heat olive oil in skillet over medium heat.
- Add sliced mushrooms to the skillet; cook until golden brown and softened (approx. 5-7 minutes).
- Stir in minced garlic and cook until fragrant (approx. 1 minute). Season with salt and pepper. Remove from heat.
- Mash avocados in a bowl using a fork. Season with salt and pepper to taste.
- Toast bread to your desired level of crispness.
- Spread mashed avocado evenly on each slice of toast.
- Spoon garlicky mushrooms generously over the avocado.
- Drizzle with a touch more olive oil (optional) and sprinkle with fresh herbs (if using). Serve immediately.
