Ingredients:

  • 2 ripe avocados
  • 8 oz (225g) button or cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 4 slices crusty bread (sourdough or whole grain recommended)
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh herbs (optional, for garnish - parsley, chives, or thyme work well)
  • Red pepper flakes (optional)

Instructions:

  1. Heat olive oil in skillet over medium heat.
  2. Add sliced mushrooms to the skillet; cook until golden brown and softened (approx. 5-7 minutes).
  3. Stir in minced garlic and cook until fragrant (approx. 1 minute). Season with salt and pepper. Remove from heat.
  4. Mash avocados in a bowl using a fork. Season with salt and pepper to taste.
  5. Toast bread to your desired level of crispness.
  6. Spread mashed avocado evenly on each slice of toast.
  7. Spoon garlicky mushrooms generously over the avocado.
  8. Drizzle with a touch more olive oil (optional) and sprinkle with fresh herbs (if using). Serve immediately.
