- ¼ cup (57g) cold unsalted butter, cut into small cubes
- 2 ½ cups (300g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup (113g) unsalted butter, softened
- 1 ½ cups (300g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (240ml) buttermilk (or milk with 1 tbsp lemon juice)
- 3 cups (approximately 3 medium) peeled and diced apples
Instructions:
- Prepare the Crumb Topping: Combine sugars, flour, and cinnamon in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Set aside.
- Preheat Oven and Prepare Pan: Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- Combine Dry Ingredients for Cake: Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
- Cream Butter and Sugar: In a separate bowl, cream together softened butter and sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in eggs one at a time, then stir in vanilla extract.
- Alternate Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Fold in Apples: Gently fold in the diced apples.
- Pour Batter into Pan: Pour batter into the prepared baking pan and spread evenly.
- Sprinkle with Crumb Topping: Sprinkle the crumb topping evenly over the batter.
- Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
