Ingredients:

  • ⅓ cup (40g) packed light brown sugar
  • ½ cup (60g) all-purpose flour
  • ¼ teaspoon ground cinnamon
  • ¼ cup (57g) cold unsalted butter, cut into small cubes
  • 2 ½ cups (300g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup (113g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) buttermilk (or milk with 1 tbsp lemon juice)
  • 3 cups (approximately 3 medium) peeled and diced apples

Instructions:

  1. Prepare the Crumb Topping: Combine sugars, flour, and cinnamon in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Set aside.
  2. Preheat Oven and Prepare Pan: Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  3. Combine Dry Ingredients for Cake: Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
  4. Cream Butter and Sugar: In a separate bowl, cream together softened butter and sugar until light and fluffy.
  5. Add Eggs and Vanilla: Beat in eggs one at a time, then stir in vanilla extract.
  6. Alternate Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Fold in Apples: Gently fold in the diced apples.
  8. Pour Batter into Pan: Pour batter into the prepared baking pan and spread evenly.
  9. Sprinkle with Crumb Topping: Sprinkle the crumb topping evenly over the batter.
  10. Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool: Let the cake cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
