Ingredients:

  • 1 (15.25 oz) box of pumpkin spice cake mix
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (or walnuts, if preferred)
  • 1/2 teaspoon ground cinnamon (optional for extra spice)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cake mix, oil, and sugar; stir until well blended.
  3. Add the eggs and vanilla extract; mix until smooth.
  4. Fold in chocolate chips (or nuts) and optional cinnamon.
  5. Drop tablespoons of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  6. Bake in the preheated oven for 12-15 minutes, until edges are lightly golden.
  7. Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
