Ingredients:

  • 500g All Purpose Flour
  • 240ml Water
  • 500g Ground Chicken Thighs
  • 1 large Red Onion, finely minced

Instructions:

  1. Knead all-purpose flour and water into a firm, smooth dough. Cover and let rest for at least 30 minutes to allow gluten to hydrate.
  2. In a large bowl, mix ground chicken thighs and minced onion. Stir vigorously in one direction to create an emulsion for a juicy filling.
  3. Divide the rested dough into small balls. Roll into paper-thin circles (approx. 3 inches in diameter) with edges thinner than the center.
  4. Place a tablespoon of filling in the center of the wrapper. Pleat the edges to seal the momo securely.
  5. Grease a steamer basket and arrange momos without touching. Steam over boiling water for 10-12 minutes until the skins are translucent and non-sticky.
