Ingredients:

  • 1/3 cup (67g) light brown sugar, packed
  • 1 teaspoon (2g) ground cinnamon
  • 2/3 cup (133g) granulated sugar
  • 1/2 cup (113g/1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons (7.5 ml) vanilla extract
  • 1 1/2 cups (192g) all-purpose flour
  • 1 3/4 teaspoons (8g) baking powder
  • 1/2 cup (120 ml) milk (whole or 2% preferred)
  • 1 1/2 cups (approximately 2 medium) peeled and finely chopped apples (Granny Smith or Honeycrisp are ideal)
  • 2 tablespoons (25g) granulated sugar
  • 1/2 teaspoon (1g) ground cinnamon
  • 1/2 cup (60g) powdered sugar
  • 1-2 tablespoons (15-30 ml) milk
  • 1/4 teaspoon (1.25 ml) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour or line the loaf pan with parchment paper.
  2. Combine brown sugar and cinnamon in a small bowl. Set aside.
  3. Toss chopped apples with sugar and cinnamon. Set aside.
  4. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  5. Beat in eggs one at a time, then stir in vanilla extract.
  6. In a separate bowl, whisk together flour and baking powder.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Don't overmix!
  8. Pour half of the batter into the prepared loaf pan.
  9. Sprinkle evenly with the cinnamon sugar mixture.
  10. Top with the apple mixture.
  11. Pour the remaining batter over the apple mixture.
  12. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil.
  13. Let cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  14. Whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled bread.
  15. Slice & Enjoy!
