Ingredients:
- 1/3 cup (67g) light brown sugar, packed
- 1 teaspoon (2g) ground cinnamon
- 2/3 cup (133g) granulated sugar
- 1/2 cup (113g/1 stick) unsalted butter, softened
- 2 large eggs
- 1 1/2 teaspoons (7.5 ml) vanilla extract
- 1 1/2 cups (192g) all-purpose flour
- 1 3/4 teaspoons (8g) baking powder
- 1/2 cup (120 ml) milk (whole or 2% preferred)
- 1 1/2 cups (approximately 2 medium) peeled and finely chopped apples (Granny Smith or Honeycrisp are ideal)
- 2 tablespoons (25g) granulated sugar
- 1/2 teaspoon (1g) ground cinnamon
- 1/2 cup (60g) powdered sugar
- 1-2 tablespoons (15-30 ml) milk
- 1/4 teaspoon (1.25 ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour or line the loaf pan with parchment paper.
- Combine brown sugar and cinnamon in a small bowl. Set aside.
- Toss chopped apples with sugar and cinnamon. Set aside.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Don't overmix!
- Pour half of the batter into the prepared loaf pan.
- Sprinkle evenly with the cinnamon sugar mixture.
- Top with the apple mixture.
- Pour the remaining batter over the apple mixture.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil.
- Let cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
- Whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled bread.
