Ingredients:

  • 1 (14 oz / 397g) bag coleslaw mix
  • 1 large apple (Honeycrisp or Fuji)
  • ½ cup (60g) dried cranberries
  • 2 green onions, thinly sliced (optional)
  • ¼ cup (30g) sunflower seeds or chopped pecans (optional)
  • ½ cup (120ml) mayonnaise
  • 1 ½ tablespoons (22.5ml) apple cider vinegar
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 teaspoon (5ml) Dijon mustard
  • ½ teaspoon (2.5g) salt
  • ¼ teaspoon (0.5g) black pepper

Instructions:

  1. In a large bowl, combine the coleslaw mix, chopped apple, dried cranberries, green onions (if using), and sunflower seeds or pecans (if using).
  2. In a small bowl or jar, whisk together the mayonnaise, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until smooth.
  3. Pour the dressing over the coleslaw mixture. Toss gently but thoroughly to coat all ingredients.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This also helps the slaw soften slightly.
  5. Serve chilled as a side dish.
