Ingredients:
- 1 (14 oz / 397g) bag coleslaw mix
- 1 large apple (Honeycrisp or Fuji)
- ½ cup (60g) dried cranberries
- 2 green onions, thinly sliced (optional)
- ¼ cup (30g) sunflower seeds or chopped pecans (optional)
- ½ cup (120ml) mayonnaise
- 1 ½ tablespoons (22.5ml) apple cider vinegar
- 1 tablespoon (15ml) honey or maple syrup
- 1 teaspoon (5ml) Dijon mustard
- ½ teaspoon (2.5g) salt
- ¼ teaspoon (0.5g) black pepper
Instructions:
- In a large bowl, combine the coleslaw mix, chopped apple, dried cranberries, green onions (if using), and sunflower seeds or pecans (if using).
- In a small bowl or jar, whisk together the mayonnaise, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until smooth.
- Pour the dressing over the coleslaw mixture. Toss gently but thoroughly to coat all ingredients.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This also helps the slaw soften slightly.
- Serve chilled as a side dish.
