Ingredients:
- 1 ½ cups (192g) all-purpose flour
- ¾ cup (150g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 large egg
- ½ cup (120ml) unsweetened applesauce
- ½ cup (120ml) plain Greek yogurt (2% or full-fat)
- ¼ cup (60ml) vegetable oil (or melted coconut oil)
- 1 teaspoon vanilla extract
- 1 medium apple (such as Honeycrisp or Gala), peeled, cored, and diced (approx. 1 cup)
- 1 tablespoon granulated sugar
- ½ teaspoon ground cinnamon
Instructions:
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a medium bowl, whisk together egg, applesauce, Greek yogurt, oil, and vanilla extract.
- In a small bowl, combine diced apples, sugar, and cinnamon. Toss to coat.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
- Gently fold the apple mixture into the batter.
- Scoop batter into muffin cups, filling each about ¾ full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
