Ingredients:

  • 1 ½ cups (192g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup (120ml) unsweetened applesauce
  • ½ cup (120ml) plain Greek yogurt (2% or full-fat)
  • ¼ cup (60ml) vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 medium apple (such as Honeycrisp or Gala), peeled, cored, and diced (approx. 1 cup)
  • 1 tablespoon granulated sugar
  • ½ teaspoon ground cinnamon

Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a medium bowl, whisk together egg, applesauce, Greek yogurt, oil, and vanilla extract.
  4. In a small bowl, combine diced apples, sugar, and cinnamon. Toss to coat.
  5. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
  6. Gently fold the apple mixture into the batter.
  7. Scoop batter into muffin cups, filling each about ¾ full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
