Ingredients:

  • 1 tablespoon vegetable oil (15 ml)
  • 1 medium onion, finely chopped (approx. 1 cup chopped) (150g)
  • 2 cloves garlic, minced (approx. 2 teaspoons) (6g)
  • 1 inch ginger, peeled and grated (approx. 1 tablespoon) (15g)
  • 1 cup shredded cabbage (green or red) (100g)
  • 1 cup shredded carrots (100g)
  • 1/2 cup bean sprouts (50g)
  • 1/2 cup chopped shiitake mushrooms (fresh or rehydrated dried) (50g)
  • 2 tablespoons soy sauce (30ml)
  • 1 tablespoon rice vinegar (15ml)
  • 1 teaspoon sesame oil (5ml)
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped water chestnuts for crunch (25g) (optional)
  • 12 spring roll wrappers (rice paper or wheat-based)
  • 1 tablespoon vegetable oil, for brushing (15 ml)
  • 1/4 cup soy sauce (60ml) (for dipping sauce)
  • 2 tablespoons rice vinegar (30ml) (for dipping sauce)
  • 1 tablespoon honey or maple syrup (15ml) (for dipping sauce)
  • 1 teaspoon sesame oil (5ml) (for dipping sauce)
  • 1/2 teaspoon sriracha (or more to taste) (2.5ml) (for dipping sauce)
  • Pinch of red pepper flakes (optional) (for dipping sauce)

Instructions:

  1. Heat oil in a skillet or wok. Add onion and cook until softened. Add garlic and ginger; cook until fragrant (about 30 seconds).
  2. Add cabbage, carrots, bean sprouts, and mushrooms to the skillet. Sauté until slightly softened but still crisp-tender.
  3. Stir in soy sauce, rice vinegar, sesame oil, and pepper. Taste and adjust seasonings as needed. Remove from heat and let cool slightly.
  4. If using rice paper, briefly dip each wrapper in warm water until pliable. If using wheat-based wrappers, lay them out on a clean surface.
  5. Place a small amount of filling (about 2-3 tablespoons) in the center of each wrapper. Fold the sides inward, then tightly roll from the bottom up, like a burrito.
  6. Preheat air fryer to 375°F (190°C).
  7. Lightly brush each spring roll with vegetable oil.
  8. Place spring rolls in a single layer in the air fryer basket (you may need to work in batches). Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  9. Whisk together soy sauce, rice vinegar, honey/maple syrup, sesame oil, and sriracha (if using) in a small bowl (for dipping sauce).
  10. Serve hot Air Fryer Vegetable Spring Rolls with dipping sauce (if desired).
