Ingredients:

  • 6 large jalapeño peppers, halved lengthwise and seeded (approximately 170g / 6oz)
  • 4 ounces (113g) cream cheese, softened
  • 1/2 cup (57g) shredded cheddar cheese
  • 1/4 cup (30g) shredded Monterey Jack cheese
  • 1 tablespoon finely chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1/2 cup (60g) all-purpose flour
  • 1 cup (85g) panko breadcrumbs
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt

Instructions:

  1. Halve the jalapeños lengthwise and carefully remove the seeds and membranes.
  2. In a medium bowl, combine softened cream cheese, cheddar cheese, Monterey Jack cheese, green onions, garlic powder, and pepper. Mix well.
  3. Fill each jalapeño half with the cheese mixture.
  4. Set up three shallow dishes: one with flour, one with beaten egg, and one with panko breadcrumbs seasoned with paprika and salt.
  5. Dredge each stuffed jalapeño in flour, dip in egg, and then coat thoroughly with panko breadcrumbs. Press the breadcrumbs on gently to adhere.
