Ingredients:

  • 1 cup (180g) dried chickpeas, soaked overnight
  • 1/2 cup (75g) chopped fresh parsley
  • 1/4 cup (35g) chopped fresh cilantro (coriander)
  • 1 small (50g) onion, roughly chopped
  • 2 cloves garlic, minced
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (15ml) olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1-2 tablespoons (15-30ml) water, if needed
  • 1 tablespoon (10g) all-purpose flour or chickpea flour, if needed
  • Olive oil spray or cooking spray

Instructions:

  1. Soak the chickpeas overnight (12-24 hrs), then drain and rinse thoroughly.
  2. Add all falafel ingredients except water to a food processor. Pulse until a coarse mixture forms.
  3. If the mixture is too dry, add water, 1 tablespoon at a time, until it holds together. If too wet, add flour, 1 teaspoon at a time, until it holds its shape.
  4. Cover the mixture and let it rest in the refrigerator for at least 30 minutes.
  5. Using a cookie scoop or your hands, form the mixture into small, flattened patties or balls.
  6. Preheat your air fryer to 375°F (190°C).
  7. Lightly spray the falafel with olive oil spray and place them in the air fryer basket in a single layer.
  8. Air fry for 15-20 minutes, flipping halfway through, until golden brown and crispy. This Air Fryer Falafel are now ready.
