Ingredients:
- 1 cup (180g) dried chickpeas, soaked overnight
- 1/2 cup (75g) chopped fresh parsley
- 1/4 cup (35g) chopped fresh cilantro (coriander)
- 1 small (50g) onion, roughly chopped
- 2 cloves garlic, minced
- 1 tablespoon (15ml) lemon juice
- 1 tablespoon (15ml) olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking powder
- 1/4 teaspoon cayenne pepper (or to taste)
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1-2 tablespoons (15-30ml) water, if needed
- 1 tablespoon (10g) all-purpose flour or chickpea flour, if needed
- Olive oil spray or cooking spray
Instructions:
- Soak the chickpeas overnight (12-24 hrs), then drain and rinse thoroughly.
- Add all falafel ingredients except water to a food processor. Pulse until a coarse mixture forms.
- If the mixture is too dry, add water, 1 tablespoon at a time, until it holds together. If too wet, add flour, 1 teaspoon at a time, until it holds its shape.
- Cover the mixture and let it rest in the refrigerator for at least 30 minutes.
- Using a cookie scoop or your hands, form the mixture into small, flattened patties or balls.
- Preheat your air fryer to 375°F (190°C).
- Lightly spray the falafel with olive oil spray and place them in the air fryer basket in a single layer.
- Air fry for 15-20 minutes, flipping halfway through, until golden brown and crispy. This Air Fryer Falafel are now ready.
