Ingredients:
- 2 thick slices Sourdough or thick-cut wholemeal bread
- 1/2 cup (120g) well-drained Cottage Cheese (full-fat or low-fat)
- 1 large Egg, lightly beaten
- 2 tablespoons (15g) freshly grated Parmesan Cheese
- 1 teaspoon finely chopped Chives
- 1/4 teaspoon freshly ground Black Pepper
- Olive Oil Spray, as needed
Instructions:
- Prepare the Topping Mixture: In a small bowl, gently combine the drained cottage cheese, lightly beaten egg, grated Parmesan, chopped chives, and black pepper until just incorporated. Do not overmix; keep some texture.
- Preheat the Air Fryer: Set the air fryer to 370°F (188°C). Give the basket a light spritz of oil.
- Prepare the Bread: Lightly brush or spray one side of each bread slice with olive oil spray.
- Assemble the Toast: Spoon the cottage cheese mixture evenly over the untoasted side of the bread slices, spreading it close to the edges.
- Air Fry (Initial Cook): Carefully place the toast (topping side up) into the preheated air fryer basket, ensuring they do not overlap. Air fry for 6 minutes.
- Cook Through: Check for doneness. If the topping is still very wet, continue cooking in 1–2 minute increments until the cottage cheese mixture is set and lightly golden.
- Crisp the Base (Optional): Carefully flip the toast and air fry the bread side up for 1–2 minutes until the bottom is golden brown, if necessary.
- Serve: Remove immediately using a thin spatula and serve hot.
