Ingredients:

  • 8 oz (225g) cream cheese, softened
  • ½ cup (60g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1 cup (150g) fresh or frozen cherries, pitted and halved
  • 1 tbsp cornstarch (cornflour) (optional)
  • 1 tbsp water (only if using cornstarch)
  • 8 egg roll wrappers
  • Cooking spray or vegetable oil
  • Water (for sealing edges)
  • Powdered sugar, for dusting (optional)
  • Cherry sauce or whipped cream, for dipping (optional)

Instructions:

  1. In a bowl, whisk softened cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
  2. In a small saucepan, combine cherries and cook over medium heat until softened, about 3-4 minutes.
  3. If desired, mix cornstarch with water and stir into the cherries. Cook, stirring constantly, until the mixture thickens slightly. Remove from heat and let cool completely.
  4. Lay an egg roll wrapper on a clean surface, diamond-shape. Spoon about 2 tablespoons of the cream cheese mixture into the center. Top with 1-2 tablespoons of the cherry filling.
  5. Fold the bottom corner over the filling, then fold in the sides. Roll tightly to form a log shape. Dab the top corner with a little water to seal.
  6. Preheat air fryer to 370°F (188°C) for 3 minutes. Lightly spray or brush the egg rolls with oil. Place egg rolls in the air fryer basket in a single layer.
  7. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  8. Let cool slightly before serving. Dust with powdered sugar or drizzle with cherry sauce, if desired.
