Ingredients:
- 8 oz (225g) cream cheese, softened
- ½ cup (60g) powdered sugar, sifted
- 1 tsp vanilla extract
- 1 cup (150g) fresh or frozen cherries, pitted and halved
- 1 tbsp cornstarch (cornflour) (optional)
- 1 tbsp water (only if using cornstarch)
- 8 egg roll wrappers
- Cooking spray or vegetable oil
- Water (for sealing edges)
- Powdered sugar, for dusting (optional)
- Cherry sauce or whipped cream, for dipping (optional)
Instructions:
- In a bowl, whisk softened cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
- In a small saucepan, combine cherries and cook over medium heat until softened, about 3-4 minutes.
- If desired, mix cornstarch with water and stir into the cherries. Cook, stirring constantly, until the mixture thickens slightly. Remove from heat and let cool completely.
- Lay an egg roll wrapper on a clean surface, diamond-shape. Spoon about 2 tablespoons of the cream cheese mixture into the center. Top with 1-2 tablespoons of the cherry filling.
- Fold the bottom corner over the filling, then fold in the sides. Roll tightly to form a log shape. Dab the top corner with a little water to seal.
- Preheat air fryer to 370°F (188°C) for 3 minutes. Lightly spray or brush the egg rolls with oil. Place egg rolls in the air fryer basket in a single layer.
- Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Let cool slightly before serving. Dust with powdered sugar or drizzle with cherry sauce, if desired.
