Ingredients:

  • 1 lb (450g) Zucchini, medium, roughly chopped
  • 4 oz (115g) Feta Cheese, crumbled
  • 2 cloves Garlic, minced
  • 2 tbsp Olive Oil, extra virgin, plus extra for drizzling

Instructions:

  1. Preheat grill to medium-high heat (or preheat oven to 400°F/200°C). Toss zucchini with 1 tablespoon olive oil, salt and pepper.
  2. Grill zucchini until tender and slightly charred, about 8-10 minutes, flipping halfway through. Alternatively, roast on a baking tray for 15-20 minutes, until tender.
  3. Allow the grilled/roasted zucchini to cool for a few minutes.
  4. Place the cooled zucchini, feta cheese, garlic, and remaining 1 tablespoon olive oil into the food processor.
  5. Process until the mixture is smooth and creamy, scraping down the sides as needed.
  6. Taste the dip and adjust seasoning with salt and pepper as needed. You might need a squeeze of lemon juice for extra tang (optional).
  7. For best flavour, chill the dip in the refrigerator for at least 30 minutes before serving. This allows the flavours to meld together. (Optional)
  8. Drizzle with a little extra olive oil and serve the 4-Ingredient Zucchini Dip.
