Ingredients:
- 1 lb (450g) Zucchini, medium, roughly chopped
- 4 oz (115g) Feta Cheese, crumbled
- 2 cloves Garlic, minced
- 2 tbsp Olive Oil, extra virgin, plus extra for drizzling
Instructions:
- Preheat grill to medium-high heat (or preheat oven to 400°F/200°C). Toss zucchini with 1 tablespoon olive oil, salt and pepper.
- Grill zucchini until tender and slightly charred, about 8-10 minutes, flipping halfway through. Alternatively, roast on a baking tray for 15-20 minutes, until tender.
- Allow the grilled/roasted zucchini to cool for a few minutes.
- Place the cooled zucchini, feta cheese, garlic, and remaining 1 tablespoon olive oil into the food processor.
- Process until the mixture is smooth and creamy, scraping down the sides as needed.
- Taste the dip and adjust seasoning with salt and pepper as needed. You might need a squeeze of lemon juice for extra tang (optional).
- For best flavour, chill the dip in the refrigerator for at least 30 minutes before serving. This allows the flavours to meld together. (Optional)
- Drizzle with a little extra olive oil and serve the 4-Ingredient Zucchini Dip.
