Ingredients:

  • 2 cups raspberries, blueberries, or strawberries (approx. 300g), fresh or frozen
  • 1 tbsp freshly squeezed lemon juice
  • 2 tbsp black or white chia seeds (24g)
  • 1.5 tbsp maple syrup or honey (22ml)
  • 0.5 tsp pure vanilla extract

Instructions:

  1. Place the fruit in a small non-reactive saucepan over medium heat. If using firm fresh fruit, add 1 tablespoon of water. Cook for 5 to 8 minutes, stirring occasionally, until the fruit softens and begins to bubble.
  2. Use a fork or potato masher to crush the fruit until you reach your desired chunkiness.
  3. Remove the pan from the heat and stir in 1 tbsp of freshly squeezed lemon juice.
  4. Add 2 tbsp of chia seeds and 0.5 tsp of vanilla extract. Stir the mixture thoroughly until the seeds are evenly distributed.
  5. Let the jam sit in the pan for 5 minutes to thicken. Transfer the mixture to a clean glass jar and let it cool completely on the counter.
  6. Tighten the lid and refrigerate until the jam is cold and firm.
